Shortcrust pastry (Linecké cukroví)

Ingredience:
- 210g plain flour (1 2/3 cup)
- 140g butter (5/8 cups)
- 70g powdered sugar (5/8 cups)
- 2 yolks
- 1 package of vanilla sugar
- 1ts lemon juice
- 2-3 tbsp cold water

How to:
- Remove the butter from the fridge in advance, all ingredients must be at room temperature.
- In the meanwhile, we put sugar, flour, butter, lemon juice, 2 yolks and then we mix all these ingredients together with hands.
- The dough must be completely smooth, it shouldn’t be sticky (if it is, use little bit more flour).
- Then we wrap the finished dough into a foil and let it rest in the fridge for at least one hour.
- ONE HOUR LATER!
- Remove the dough from the fridge, divide it into 3-4 smaller pieces, which we roll out, the basic is that each batch of dough that we roll out is sufficiently cold.
- Roll out the dough into a sheet that shouldn’t be too thin. When rolling the dough, lightly sprinkle with sifted icing sugar, which guarantees that we can use the remnants of the dough for other wheels, no flour will be added to the dough and thanks to this the cookies will be beautifully supple, not hard and no scabs will be made on it. Cut any shapes you like with a cookie cutter you will always need 2 one for the bottom and the other one for the top – don’t forget to cut the centre too – we use a special circle cutter or a heart shape cutter for it.
- Keep in mind that the dough will always be a little sweeter.
- Bake the sliced wheels at 180 ° C for about 10 – 15 minutes.
- We guard the oven, it happens that each piece is baked at a different time.
- Spread the preferred jam on one side of the piece and cover it with the other side that has a hole in it, sprinkle with a little bit of sugar and you’re done. 👌
